Garlic & Herb Twists

A veritable forest of herbs combines with garlic, chilli, cheese and crisp, golden puff pastry to create delicious twists you can use on any platter! If you have leftovers (and we don’t think you will), pop them into a sealed container and save them for a sneaky midnight snack.

  • 1 (375g packet) Carême All Butter Puff Pastry, defrosted
  • 50g unsalted butter, room temperature
  • 3 garlic cloves, finely chopped
  • ¼ teaspoon dried chilli flakes (optional)
  • ¼ cup Parmigiano-Reggiano cheese, grated
  • ¼ cup fresh basil, finely chopped
  • ¼ cup fresh continental parsley, finely chopped
  • 2 tablespoons fresh sage leaves, finely chopped
  • 1 egg yolk
  • A splash of milk.
All Butter Puff Pastry


  1. Preheat oven to 180°C fan-forced (200°C conventional).
  2. Combine the butter, garlic, chilli (if using), cheese, basil, parsley and sage in a small bowl, mixing until well combined.
  3. Unroll the pastry, place it onto a lightly dusted work surface, then dust with flour. Roll the pastry out evenly, then spread the herb butter mix over half of the pastry. Fold the other half of the pastry over the herb butter, pressing down gently to encase the filling.
  4. Cut across the short side of pastry in 5mm thick strips. Holding each end, twist each strip to create a spiral. Place the pastry spirals on prepared baking trays, 3cm apart.
  5. In a small bowl, beat the egg yolk and milk together until well combined. Brush each pastry spiral with the egg wash. Cover with plastic wrap and place into the refrigerator for 30 minutes.
  6. Bake in the oven for 20 to 25 minutes, or until the pastry is puffed and golden. Remove to a cooling rack and allow to cool completely. Store at room temperature in an airtight container until use.
