Pork and Fennel Sausage Roll

Ingredients

  • 375g pack Careme All Butter Puff, defrosted.
  • 1 tbsp olive oil
  • 2 cloves garlic, minced.
  • 1 brown onion, finely chopped.
  • celery stalk, finely chopped.
  • 2 tsp fennel seeds, toasted (plus more to garnish)
  • 750g regular pork mince (not lean)
  • 3/4 cup panko breadcrumb
  • 3 tbsp milk
  • 1 tbsp thyme leaves
  • 1 egg, whisked.
  • Salt and pepper, to taste.

Method

  1. Preheat oven to 200°C fan forced. Line a large tray with baking paper.
  2. In a bowl combine the breadcrumb with milk and stir until combined. Set aside.
  3. Heat oil in a fry pan over medium heat and sauté garlic, onion and celery until translucent. Set aside to cool for 5 minutes in a large bowl.
  4. To the onion mix add pork mince, soaked breadcrumbs, fennel seeds and thyme and season with salt and pepper.
  5. Unroll pastry sheet on a large, lined baking sheet and place the mince mixture in an even log down the center of the pastry all the way to the ends. Roll the pastry over the filling pinching the ends together, then crimp the edge with the tynes of a fork to seal.
  6. Brush sausage roll with egg, sprinkle with fennel seeds and bake for 35-40 minutes or until the pastry is golden and the filling is cooked.
